SBIF Client & Owner of Edge of Sweetness, Returns to Nursing

Established in 2017, Edge of Sweetness bakery makes everything by hand with real ingredients, never using additives or preservatives. Their offerings span special occasion cakes to single serving sweet treats. Owner, Kate Merrill, is committed to the Edgewater community and not only serves her neighborhood customers, but offers a chance for other kitchen creatives to utilize her space to build up their own culinary business.

Merrill utilized a SBIF grant, administered by SomerCor, to facilitate the buildout and building rehabilitation work needed for the bakery and café space. This included everything from a new storefront and facade, interior framing, plumbing and electrical work, and the installation of a walk-in cooler/freezer.

The COVID-19 crisis interrupted regular business at Edge of Sweetness. But Merrill, who worked as a nurse for over 20 years, as first highlighted in Block Club Chicago, has returned to her former job as a nurse at Mount Sinai Hospital.

“I’m a helper,†Merrill said. “I have the knowledge and skills. I couldn’t sit idly by and have people that need help out there.â€

Edge of Sweetness is not open for regular business, however, they are open for “stock up sales” once a week based on pre-ordering. Check out their website to pre-order now for pick up on Friday from 11am-4pm.
